Campground Cooking: Tacos Al Pastor

We recently discovered the Ninja Grill & Smoker, and it has quickly become a staple in our kitchen! Tacos Al Pastor is one of the standout meals we’ve prepared so far. These tacos were melt-in-your-mouth delicious, exceptionally tender, and incredibly juicy! What amazed me the most was how easy it was to achieve such restaurant-quality results with minimal experience using a smoker.

If you want to expand your culinary horizons and try new recipes, I highly recommend trying the Ninja Grill & Smoker. It’s perfect for anyone, whether you have no experience (like me) or you’ve been smoking for years. You will love this thing. Happy grilling!

You start with pork shoulder shaped like a football and end with a taco that is so delicious you don’t really need to add much in the way of toppings. They were best with fresh cilantro and pickled onion.

Trust me! You want to make these for yourself! They are perfect for a crowd!

 
 
 

Tacos Al Pastor Recipe

Ingredients

  • 3 pounds pork shoulder sliced into half inch slices

Marinade

  • 3 tbsp Achiote Paste or substitute with the following ingredients as I did.

    • 1 1⁄2 Tbsp paprika

    • 1 Tbsp white vinegar

    • 3⁄4 tsp dried oregano

    • 1 tsp garlic powder

    • 1⁄4 tsp oil

    • 1⁄4 tsp ground cumin

  • 2 tbsp chili powder

  • 1 tbsp garlic powder

  • 1 tbsp dried Oregano

  • 1 tbsp salt

  • 1 tbsp pepper

  • 1 tbsp cumin

  • 1 cup pineapple juice

  • fresh cilantro

  • pickled onions

  • tacos

  • Any other toppings you prefer

Directions

Mix seasonings in a bowl.

Add the sliced pork to a gallon ziplock bag. Add the dry ingredients and pour in the pineapple juice. Close the bag and mix to coat the pork. Place the bag in the fridge for 2-3 hours.

Skin and slice pineapple into 2 one-inch slices and the rest into 1/4-inch slices.

Using skewers, stack the large pineapple slice first and add the pork slices. Alternating 2-3 slices of pork with one slice of pineapple. Finish by capping with the 2nd large pineapple slice.

Add pellets to the Ninja woodfire grill and set the Smoker to 250 degrees F.

Place the pork on the grill plate and smoke until the internal temp reaches at least 145F. The sliced pork will come to temperature much faster than a whole pork butt.

Switch to grill at 350 and char the outside of the pork until desired temperature and char.

Remove from the grill and let rest. Then, slice off the skewer for tacos.
